golden-delicious-applesI don’t eat apples often, since I’ve cut carbohydrates from my diet, but when I do get a chance to eat one, it has to be a golden delicious!  Last Summer’s crop looked so nice and juicy.  🙂

I’d probably use a red delicious if I were to make caramel apples for Halloween.  It might be weird to bite into one and discover a green apple.i-have-an-apple-basket

It’s been a challenge to find apple recipes that are low carb, but here’s one of my favorites:

LOW CARB GRAIN FREE APPLE DUMP CAKE

Serves 12, 11 carbs per serving

INGREDIENTS:

1 c. coconut flour

1 c. Splenda

2 tsp. cinnamon

2 tsp. baking soda

6 eggs, beaten

1/2 c. butter, melted & cooled

1 tsp. cinnamon liquid stevia

4 c. Gala or Fiji apples, peeled, cored, sliced

INSTRUCTIONS:

Preheat oven to 325 degrees.  In a large bowl, whisk the flour, Splenda, cinnamon and baking soda together.  Whisk in eggs, butter and Stevia until combined.  Stir in apple slices until covered.  Spread mix into a greased 9 x 13″ baking dish.  Bake for 45-50 minutes.  Enjoy with Reddi-Whip.

TL A COMMENTARY FROM THE HEART (30)LC KEY LIME PIEThis has been such a fun journey with my friends!  Thanks to Deanna Stalnaker for sharing this recipe on facebook!  Even though we have shared great main dish and side dish recipes, what is life without a little dessert?  I was so tickled to see this because believe it or not, Key Lime Pie is my favorite – yeah, it really is!

Deanna said that even though the recipe calls for a 0.6 oz. package of sugar-free Jell-O, she uses the 0.3 oz. package.  So make a note of that.  😉

So far I haven’t gone completely Atkins, but I think legal donuts sound really good!  I like “fair food” – and truth be told, that’s the real reason I go to our state fair every year.  :-/

So on those days when you don’t think you can live on low-carb and low-fat, know that you don’t have to.  There are alternatives to traditional high carbohydrate foods.  Aren’t we thankful for “the way of escape” recipes that keep blood glucose numbers happy?  I know I am!

NATIONAL GRILLED CHEESE SANDWICH MONTH

TL APRIL IS NATIONAL GRILLED CHEESE SANDWICH MONTHIt’s a meal we usually enjoy in front of the fire as snow flies outside – but yes, April is National Grilled Cheese Sandwich Month.  I must say, my husband makes the most delicious ones in the world!  Oh, so good!

Here’s a traditional recipe – one that most of us are familiar with.

WW MINI GRILLED CHEESE SANDWICHES WITH TOMATO SOUP (makes 4 servings – 6 points each)

INGREDIENTS:

2 Tbs. reduced calorie vegetable oil butter spread

4 slices reduced-calorie whole wheat bread

4 slices WW American cheese

14 1/2 oz. cream of tomato soup

DIRECTIONS:

Spread 1-1/2 tsp. vegetable oil & yogurt spread on each slice of bread. Heat a large nonstick skillet over medium heat. Lay 2 slices of bread, dry side up, in skillet. Place 2 slices Reduced Fat American Pasteurized Process Cheese Product Singles on each slice of bread. Top each with the remaining 2 bread slices, spread side up. Cook until sandwich is golden brown on each side.

Remove from pan and cut each sandwich into 4 squares. Arrange 4 grilled cheese sandwich squares onto a skewer; repeat. Serve 1 grilled cheese skewer with 1 cup prepared soup.

I ran across the most interesting recipe for a grilled cheese sandwich – but hang on…  it’s really different – but in a good way.  😉

WW GRILLED SWISS CHEESE SANDWICHES (makes 4 sandwiches – 6 points each)

INGREDIENTS:

1/4 c. light mayonnaise

4 tsp. Dijon mustard

8 slices reduced calorie rye bread

8 slices WW reduced fat Swiss cheese slices

cooking spray

DIRECTIONS:

In small bowl, combine mayonnaise & mustard.  Spread 1/2 Tbs. on each piece of bread.  Top 4 pieces of bread with 2 slices of cheese each; cover with remaining bread, mayonnaise side down.

Coat skillet with cooking spray.  Heat over medium heat.  Grill sandwiches, pressing down lightly with a spatula, until lightly toasted & cheese melts, about 3-5 minutes.

If you’re looking for something to break the monotony, give this a try – it’s really pretty good!  If you have the points to spare, you can even have a little pouch of Goldfish crackers for 3 points!  Put them in your soup or just eat them on the side – either way they are so good!  🙂

  •  Coupons! Always coupons! And if you have a coupon that doesn’t have a specific size and it’s not on sale, always get the smallest one. It saves you more per ounce.
  • Beware of freebie sites on the internet.  Once I joined one of those and requested a few things and my computer ended up with all sorts of problems.  Is getting a virus on the computer worth getting a few freebies sent to my door?  No.
  • Be cautious about where you get coupons online for the same reason.  Some sites are notorious for either swamping your computer with spam or sending viruses.  Again, weigh your options and you’ll find it’s not worth the grief.
  • Keep in mind that Walmart has price matching.  If you see an item advertised elsewhere for less money, clip the ad and take it in to Walmart.  When you check out, show the cashier the ad and they will honor that price.
  • Try RedLaser to scan bar codes while you shop.  It compares prices at nearby stores so you can find the best deals.
  • Do you make several trips to the pharmacy?  Next time take a look around while waiting for the medicine.  Often the prices on nonperishables like crackers are lower than grocery stores.
  • Staple items like cereals, flour, rice and coffee are often less expensive at Supercenters like Target or Walmart.
  • There are cooking websites that allow you to type in the ingredients you have on hand.  The sites generate recipe ideas using only those foods so they don’t go to waste and you don’t have to make an extra trip to the store.

  • Remember that frozen foods are just as nutritious as fresh.  When your favorite vegetables and fruits are out of season, you can find them at the frozen food aisle.
  • If you go to a farmer’s market just before it closes, the sellers might be willing to negotiate prices on items they don’t want to haul back home.
  • Sales run in six or eight-week cycles.  Scan circulars for deals on foods that won’t expire, and buy enough to last a month or two until the next sale.
  • A lot of times, I see something I really like in store, but can’t afford. I go on Ebay and often find it for a fraction of the cost, even with bidding wars. Eg: Lacoste polo shirts usually $90+ in store ~ I can find them for around $15 including shipping for like new, pre-owned on Ebay.

So you see, it really is possible to save at the store if you can wind your way around all the hype and see your way clear to the common sense ways of saving at the grocery store.  🙂

The most popular way to enjoy Nutella is on toast or pancakes.  It’s fun and healthy to add blueberries or strawberries to the mix.  Pineapple rings and kiwi fruit taste pretty good with it too.  Is it a snowy February where you live?  Are you having a craving for chocolate?  Nutella is a great way to curb the craving without breaking the calorie bank – especially on a snowy day!

Remember the days before Nutella when we ate peanut butter and banana sandwiches?  Now that Nutella is here, we replace regular peanut butter and get a better sandwich.  There is no hydrogenated oil in Nutella and there is cocoa in it, so hey – if there is chocolate in my spread…  that makes me very happy – how about you???

With all this butter, I can’t promise that this is the most healthy recipe I’ve ever seen, but it does look good.  I wouldn’t recommend eating the whole thing in one setting.

Have you heard of the Nutella “Spread the Happy” Truck Tour?  They’ve taken it on the road!  This video is from July 2014 – and at that time they were celebrating 50 years of spreading happy!  I had no idea it had been around that long!

I like no bake cookies.  These are fun and easy – and delicious!

I do know that once you try Nutella you will get hooked.  It’s delicious with crepes, pancakes, toast or English muffins.  I even use it in my oatmeal.  You may even find yourself eating it by the spoonful!  Wink!  😉

From the title, you may think we’re going to talk about dating nutty people, but no – that’s not what this is about.  LOL!!!

It’s NATIONAL DATE NUT BREAD DAY!!!   Doesn’t quick bread sound like a good snack to bake up and take to work or give to a neighbor?  Baked goods are a wonderful last-minute gift to give.

Here’s a great recipe for diabetics – it’s only 4 ingredients (one of them is coffee – yay), easy and inexpensive to make!

I wonder if this recipe would be better if we used Splenda in place of sugar – but it also has shortening in it – so…  hmm.  So much for healthy alternatives.  We don’t use shortening in our family.  The finished bread sure does look good though.

Well, I hope you can find a recipe that you like in this collection.  You might want to try more than one of them.  Date Nut Bread is one of the favorites in our family not only because of the health benefits, but because it reminds us of Christmases past.  What is it about food and holidays?  I don’t know – but I sure do like it!  😀

It’s tart with a little sweet and it’s taste can’t be beat – and it will make you pucker up!  Take a bite of a lemon cupcake and wish everyone around you a happy NATIONAL LEMON CUPCAKE DAY!!!

Frankly, I think this day is odd because it’s in the middle of December!  When I think of a light, tart lemon cupcake, I picture springtime and warm weather and lots of sunshine – not cold temperatures with snow everywhere!  Hey, I just report the wacky holidays – I don’t make ’em up!

Maybe some lemon cupcakes are just what you need to eat today to give your taste buds a break from all the heavy foods from Thanksgiving – and all the even heavier fare coming up at Christmas!

The lemon cupcake fully deserves its day of recognition (even though it is in mid-December).  The humble lemon has gotten a bad rap – and it’s time the truth be told about this humble and misunderstood citrus wonder.

Did you know that by adding lemon (fresh – not that bottled concentrate stuff) to your water, you can immediately make your body more alkaline?  Why does that matter?  Because the more alkaline your body is, the more healthy it is!  A more acidic body is prone to be less healthy.

There is a compromise – you can make the healthy recipe and have a cupcake.  Then go squeeze some lemon in your water and drink it down.  That should work – right?
