TL A COMMENTARY FROM THE HEART (31)12075076_1019943578045285_2006305397285375045_nHAPPY FALL, Y’ALL!!!  I don’t know why we are always so anxious to rush into this season more than the others, but my house has been decorated for autumn for at least two weeks!  We’ve had so much rain this month, it’s almost as if we’re jumping into spring instead of fall – but it’s fall according to the calendar – so we’re going to go with that!

Today I want to ask you if you’ve ever had a “happy accident”???  Take a moment to let that sink in before you answer.  The two words don’t seem to belong together – happy and accident – do they?  Hmm…  has Linda been hitting the sugar-free apple cider a bit too much?  No…  I really do want to know if you have a story to tell about a “happy accident”.  Oh…  I said that phrase again.  Does it set your teeth on edge?  I could see where it would.

Sometimes we think our mistakes are deal breakers for life.  We can’t seem to get over them, even though the most over-used sentence in America is LETITGO.  Thanks, Reba…  we’re learning.  I’m a work in progress.  Once I ask forgiveness from God and He forgives, it makes it easier for me to forgive myself and THEN I can letitgo.

The other day I was trying to find some images, photographs, for poetry I wanted to design.  My go-to place is Pixabay because I’ll be honest, I can’t afford to pay money for the images I use here on the blog or for poetry designs.  Lucinda and I also have good friends who have graciously given me unlimited permission to peruse through their facebook accounts for photos – thank you so much to Chris Cummins, Dave Mock, Karen Tubbs Stell, Sheri Berezowecki-Lemay, Valerie McKinney, Bill Woods, Terri Boggs Rowe, Marian Poppy Ballestero, Jimmy Stone, Katrina Huckabay, Stephanie G. Lutz, Candace Waters, Pete Lord, Sam Peters, Arleen Krueger, Gina Womack, Joanna Hays and Mike Durbin.

I also want to thank Lucinda not only for her wonderful poems, but for letting me use photos from her facebook page for my poems.  🙂

I was searching Pixabay for a certain kind of image – I had a very specific type of photo in mind.  I thought I typed a certain word in the search engine – but when I double-checked, I typed a completely different word.  It took me to a subject I know absolutely NOTHING about – and I mean nothing…  SPORTS.  Every writer knows this…  you write about what you know.  Never try to fake what you don’t know to be fact.

I laughed out loud and told God, “Wow – that was a huge OOPS, wasn’t it?”  God impressed me to take a look at the images on the page – and one in particular caught my eye – then another.

It was A HAPPY ACCIDENT – I knew these images needed to be used.  I also knew that I didn’t know a thing about football.  I fought with God – and said, “Lord, I don’t know anything about this subject – there’s no way I can write anything good.”  Then I heard God say, “Lucinda does…  give this to her.”

It’s funny because when we’re obedient, God rewards us – He really does.  Once I sent the image to Lucinda, look what she did…taking-a-knee

But wait…  God’s not done.  He gave me words to use for the second image I found!teach-us-to-pray

I know the term “happy accident” is from Bob Ross…  we all know how he used to refer to the OOPS in painting as a happy accident.  Around the time all of this was happening, I also saw this interesting photo from Bill Woods and thought, “That describes what happened perfectly!  I’m going to call it a ‘happy accident’ – like Bob Ross did!”  14067573_10208342567854653_5861265440443893614_n

God blesses our efforts when we obey.  I love “happy accidents” because when it’s all said and done, it was not an accident at all.  It was A GOD THING.  He works differently with each of us because we aren’t robots who can be dealt with the same way – we are individuals in God’s eyes, and He works with us in just the right way.  I’m so thankful that God can make anything work for the good…  aren’t you?  🙂

12-10 WHEN I THINK ABOUT MISSISSIPPI

OK – hands up, everyone who had fun learning to spell MISSISSIPPI – with the emphasis on the 4 S’s and 2 P’s.  For that reason alone, I’m grateful that the great state of Mississippi was admitted as the 20th state of the Union on this day back in 1817.

And Ray Stevens would have had to choose a different state in which that famous revival took place – can you imagine?

And the song by Mountain would not be called Mississippi Queen.  Hmm…  that would be weird.

And the coach of the Mississippi State Bulldogs had this to say as he grinned from ear to ear on November 22nd after their 0-51 victory over Vanderbilt:

I couldn’t be happier with how our guys responded; offense, defense, kicking game, guys flying around, making plays, playing with that chip on their shoulder and really believing we have an awful lot still to play for.  You saw that on the field with how our guys played.  – Dan Mullen

Yep – we’re glad that on this day in 1817, Mississippi joined the Union!

I’ve never been to Mississippi, but it is on my bucket list to visit there one day!  I imagine overwhelming Southern hospitality, a laid-back attitude, good music and good food (not necessarily in that order).  What is life like in the deep south?

Ah – the gospel music has SOUL to be sure!  I feel God’s Holy Spirit!  But no squirrels inside this church (I am just a little disappointed).

Now – let’s check out that Southern hospitality!  There are so many Bed & Breakfasts in Mississippi.  Really though, can you imagine soaking in the South from a Motel?  I can’t.

I just read that Mississippi lost their first Miss America, Mary Ann Mobley.

Rest in Peace, Mary Ann Mobley. A Mississippi treasure.  She was Miss America in 1959.

God richly blessed this Nation when He saw fit to allow Mississippi to become a part of the United States of America!  😀

11-6 NACHOS ANYTIME

If we were in Hawaii, we’d order Kalua pork and pineapple nachos.  If we were in Music City, Memphis, Tennessee, the nachos would be barbecue with pulled pork strewn over the top with a ton of cheese sauce poured over them with jalapeño pepper slices.  These yummy chips can be made any way you like, but there is usually one common ingredient – melted cheese!

Ignacio Anaya, a Mexican from the border town of Piedra Negras, accidentally invented nachos in 1943.  Hungry guests showed up at a Victory Club, the restaurant he was working at across the Rio Grande River from Texas.  They were the wives of American soldiers who had shopped in town and needed food.

He improvised with the ingredients he had on hand – tortillas and cheese.  He cut the tortillas into triangles and melted the cheese along with the triangular chips.  He topped the dish with jalapeño peppers – and Voila’ – the first recipe of Nachos was created.

This is from 2009 – but still fun to watch.  I sure could not eat that whole platter of nachos – could you?

Anaya was called Nacho because he was short – so the dish he created was called Nachos.  It grew in popularity in Texas and the Southwest over the next 20 years.  Anaya went on to work at the Moderno Restaurant in Piedras Negras, which still uses the original recipe.  Later he opened his own place, Nacho’s Restaurant in the border town.

Nachos really gained popularity in the 1970’s and 1980’s thanks to Frank Liberto.  He began selling nachos at Arlington Stadium, home of the Texas Rangers.  He created a melted cheese product that was part cheese and part secret ingredients.  His cheese sauce didn’t need to be heated and the shelf life extended well beyond the original recipe, which used perishable cheese.

Nachos were introduced to famous broadcaster Howard Cosell, who put in a plug for the snack during a Monday night football game.  That endorsement helped turn nachos into a household name.  Nachos are now a part of tailgate parties nationwide.

Nachos are a common snack and are fixed in many ways.  Some people like them with just cheese and other’s like them loaded or super.  You can add meat, refried beans and melted shredded cheese.  Cold toppings such as shredded lettuce, tomatoes, salsa, onion and jalapeño are piled on top to make it a sort of mini taco snack.  Add a dollop of sour cream or guacamole to that.  The possibilities are limited only by your imagination.   Some ideas include cilantro, chicken, chorizo, bacon, lime, olives and Pico de Gallo.

Celebrate today – with nachos!  Happy NATIONAL NACHOS DAY!!!  😉

Linda’s Favorite Nacho Recipe:

Ingredients:

1/2 lb. extra-lean ground beef

1/2 lb (8 oz.) Velveeta, cut into 1/2-inch cubes

7 cups tortilla chips (6 oz.)

1 c. shredded lettuce

1/4 c. sliced black olives

1 can (10 oz.) Ro*tel diced tomatoes & green chilies, well-drained

Directions:

 meat in skillet; drain.

 Velveeta in small microwaveable bowl on HIGH 1 min. or until completely melted, stirring after 30 sec.

 chips on large platter; top with Velveeta, meat and remaining ingredients.
