OREO COOKIE DAY

LET IT SNOWWe only have a few more days of winter, at least according to the calendar.  Mother Nature may have other plans, as we here in Kansas know all too well.  In any case, today is Oreo Cookie Day!  How will you enjoy these sweet treats?  A favorite, of course, is a big glass of milk for dunking – or how about a large cup of coffee for dunking?  That sounds good!  🙂

Not to put a damper on the day, but a friend on facebook mentioned that Nabisco is moving to Mexico and it made me so sad.  I really hope our economy turns around to the point where they bring Nabisco and many other companies back to America, don’t you?

Through the years Nabisco has come up with SEVEN varieties of Oreo cookies:

  • Oreo Chocolate
  • Oreo Fudge Cremes
  • Oreo Chocolate Birthday Cake Flavor Cremes
  • Oreo Double Stuf Chocolate
  • Oreo Lemon Cremes
  • Oreo Double Stuf Golden
  • Oreo Double Stuf Heads or Tails

There’s a perfect Oreo for every mood you find yourself in – and let’s face it, variety really IS the spice of life!

How about adding a few Oreos to your favorite brownie mix?

OREO BROWNIE TREATS (makes 24 brownies)

Ingredients:

1 pkg. (19-21 oz) brownie mix (for a 9×13 pan)

15 Oreo Chocolate Cookies, coarsely chopped

Instructions:

Stir chopped cookies into batter.  Prepare pan and pour batter in pan.  Bake as directed on package.

Note:  When baking in a glass baking dish instead of a metal pan, always reduce the oven temperature by 25 degrees.

Per Brownie:

170 calories

8 g fat

2.5 g saturated fat

20 mg cholesterol

125 mg sodium

25 g carbohydrates

1 g fiber

16 g sugar

2 g protein

To lower the carbohydrates and sugar content, I use Pillsbury Sugar Free brownie mix – but it takes two boxes to make 9×13 size.  Adding Oreo pieces does add a bit of sugar and carbohydrate back into the brownie, but it’s not enough per brownie to matter.  🙂  Now, if you sit and eat the whole 9×13 pan of brownies – remember you’re adding 15 cookies!  Then you have to count them!  🙂

1-24 DADDY AND PEANUT BUTTER

This is one of my favorite holidays, NATIONAL PEANUT BUTTER LOVER’S DAY!!!  Did you know it takes about 540 peanuts to make a 12-ounce jar of peanut butter?  In our house, we have the peanut butter with no hydrogenated oils, which means there is no trans fat.  There is still a need to watch the serving size because they all use palm oil, but it’s more healthy if it is not hydrogenated.  Also, if the label says Peanut Butter Spread, it’s not the same as Peanut Butter.  Read labels carefully.  

How do you eat peanut butter?  I like to mix 2 Tbs. of peanut butter with 2 Tbs. of sugar-free honey and use it to dip apple slices.  There was a time I bought caramel dip for apple slices, but there is a ton of sugar in it and I needed to come up with a more healthy alternative.

I like to use recipes for cookies that have no flour of gluten in them.  I found this one for peanut butter cookies.

As usual, I substitute the white sugar with Splenda.  If you use a peanut butter with no hydrogenated oil, that makes this a perfectly healthy cookie!

Sometimes there is nothing better than an old-fashioned peanut butter and jelly sandwich!  I heard a nutritionist say that there is nothing as balanced as that.  There is protein, carbohydrates and a little sugar to keep your blood sugar from bottoming out.  Since I have a problem with high blood sugar, I choose to have a sugar-free jelly.  Smucker’s sugar-free apricot spread is my favorite.  I also use a 9-grain bread instead of white bread because it doesn’t cause my blood sugar to spike.

OK – I just viewed this and it grossed me out.  I like peanut butter, and I like coffee (you KNOW I do) – but…  peanut butter coffee???  Oh yeah – no, that’s never happening!

I really don’t venture out and experiment with peanut butter like that.  Um…  no.  Besides, I’m not sure you can trust someone who says he has a glass of coffee instead of a cup.  Jus’ sayin’…

Peanut Butter with no hydrogenated oils is a healthy source of protein, but remember a serving size is only 1 Tablespoon – so it packs a nutritional punch!  It’s probably a bad idea to sit in front of the TV and mindlessly eat it straight from the jar.  I don’t know how anyone could do that anyway – I mean, wouldn’t it get stuck to the roof of your mouth?  :-/

God gave His very BEST to us and for us…  this truly is the season of giving…  how many ways can we give this year?  Does it take a large budget to give?  No – not a large budget – just a creative mind and an intent of heart that bends toward giving.

We just enjoyed a lovely celebration of Advent at church and are feeling the true meaning of Christmas – and the Spirit that comes with it.  I have an idea…  since today is Monday and a bit of an anti-climax of sorts, to put it mildly…  why not take snacks to work without being asked???

One of the perks of being part of the workforce is the Monday morning you walk in and there are homemade goodies setting on the conference room table for anyone to indulge in.  Oh yeah – it’s like a big score to begin the week!

COOKIES AND CAROLS

You don’t have to spend hours making these goodies either – and you don’t have to hire a professional baker or pay a high price at the bakery.  There are tons of quick and easy recipes that turn out great every time and will be sure to please your co-workers.  Whether you sing Christmas Carols as you serve them…  well, that’s up to you!  😉

Here’s one of my favorites:

ALMOND-CHOCOLATE-CHERRY COOKIES

Makes 24 cookies

11 g. carbohydrates per cookies / 81 calories / 6 g. sugar

INGREDIENTS:

6 Tbs. butter, softened

3/4 c. Splenda

1 egg

1 egg yolk

1 tsp. vanilla

1 oz. semi-sweet chocolate, melted & cooled slightly

1 1/3 c. flour

1/2 c. dried cherries

1/3 c. sliced almonds

1 recipe Chocolate-Almond Glaze

DIRECTIONS:

  1.  In a medium bowl beat butter with an electric mixer on medium-high speed, about 2 minutes or until smooth.  Add Splenda, beating until creamy.  Beat in egg, egg yolk and vanilla until combined.  Stir in melted chocolate.  Stir in flour.  Fold in dried cherries and almonds.  Cover and chill dough for one hour.
  2. Preheat oven to 350 degrees F.  Line cookie sheets with parchment paper; set aside.  Shape dough into one inch balls.  Place balls about one inch apart on prepared cookie sheets.  Bake for 10-12 minutes or until centers are set.  Transfer cookies to wire racks; cool completely.
  3. Drizzle Chocolate-Almond Glaze over cooled cookies.  Let stand until glaze is set.  To store, layer cookies between sheets of waxed paper in an airtight container.  Cover.  Store in the refrigerator for up to 3 days or freeze for up to 3 months.

CHOCOLATE-ALMOND GLAZE

INGREDIENTS:

1/2 oz. semi-sweet chocolate

1 1/2 tsp. butter

1/2 c. powdered sugar

1 Tbs. fat-free milk

Dash almond extract

DIRECTIONS:

In small saucepan, combine chocolate and butter.  Heat and stir over low heat until melted and smooth.  Remove from heat.  Stir in powdered sugar, milk and almond extract until smooth.

As cookies go, these are the most healthy and tasty ones I’ve had.  I can actually eat a couple of these without causing my blood glucose to raise too high.  So, while everyone else is bringing in goodies that you know you need to stay away from – you can bake these up and know that everyone will enjoy them – and not wreck their health.  Wink!  😉

The most popular way to enjoy Nutella is on toast or pancakes.  It’s fun and healthy to add blueberries or strawberries to the mix.  Pineapple rings and kiwi fruit taste pretty good with it too.  Is it a snowy February where you live?  Are you having a craving for chocolate?  Nutella is a great way to curb the craving without breaking the calorie bank – especially on a snowy day!

Remember the days before Nutella when we ate peanut butter and banana sandwiches?  Now that Nutella is here, we replace regular peanut butter and get a better sandwich.  There is no hydrogenated oil in Nutella and there is cocoa in it, so hey – if there is chocolate in my spread…  that makes me very happy – how about you???

With all this butter, I can’t promise that this is the most healthy recipe I’ve ever seen, but it does look good.  I wouldn’t recommend eating the whole thing in one setting.

Have you heard of the Nutella “Spread the Happy” Truck Tour?  They’ve taken it on the road!  This video is from July 2014 – and at that time they were celebrating 50 years of spreading happy!  I had no idea it had been around that long!

I do know that once you try Nutella you will get hooked.  It’s delicious with crepes, pancakes, toast or English muffins.  I even use it in my oatmeal.  You may even find yourself eating it by the spoonful!  Wink!  😉

12-20 LET'S GO CAROLING

Back in my day we didn’t have big shopping malls – but I think this would have been really cool – I mean, it’s like singing in a great big shower – listen to the acoustics in there!!!

 Just because I can’t sing doesn’t mean I won’t sing.

I wish I could sing – when I open my mouth to sing praises to God, I truly and quite literally make a joyful noise.  I can play the piano ’til the second coming of Christ – but my singing lacks oomph.  I’m a quiet little alto – I sing on pitch but I have absolutely no volume!  As long as God can hear me, that’s all that matters, right?  Yep – that’s what I thought.

It’s GO CAROLING DAY!!!  Some of the most fun times I remember in church was when we were outside the church, ministering to others.  I enjoyed going to see the shut-ins and singing Christmas Carols to them with fellow choir members.  I remember arguing with the other altos about who would have to stand next to the soprano – no one wanted to get thrown off their part.  I always got stuck standing next to the soprano with an earplug in that ear.  Sigh – good ol’ Linda!

We used to go see the shut-ins, then visit the deacon’s houses.  One couple always invited us inside for hot apple cider, hot chocolate, cookies and candies of all sorts – all homemade!  That was such a treat, especially if it was really cold outside!  I think we sang better when we knew we’d be invited inside for goodies!

K – it’s bad when the one listening has to prompt the one singing…  yeah – awkward caroling – LOL!  What do you mean you don’t know the lyrics to the songs?  You got some ‘xplaining to do!!!  This is funny!

Of course we know that caroling is meant to be a reminder of the true meaning of Christmas – the birth of Christ!  We have fun with singing and the awkward caroling and the secular songs – but really the idea is to remind others of the hope and peace that IS Christ.  We all know that without Christmas we could not celebrate Easter, right?

EAT A CRANBERRY DAY

TL 11-23 EAT A CRANBERRY DAY

Today is EAT A CRANBERRY DAY!  I suggest you eat several or drink some diet cranberry juice (it’s yummy).  I fix this recipe with Brussels sprouts once in a while and it really is a good way to get healthy foods –  but the salad tastes so good.  I hope you’ll try it today.

Attention – COOKIES!!!  Now that I have your attention, take a look at this!

CRANBERRY DROP COOKIES

Ingredients:

1/4 cup butter or margarine

1 1/2 cups flour

3/4 cup Splenda brown sugar, firmly packed

1/2 teaspoon baking soda

1/4 teaspoon salt

3 Tablespoons milk

3/4 cup chopped cranberries

1 egg

1 1/2 teaspoons grated orange peel

 Directions:

Preheat oven to 375 degrees F.

Grease two large cookie sheets.

Cream butter and Splenda in a large mixing bowl with a mixer at medium speed.

Beat in milk, egg, vanilla and orange peel.

Combine dry ingredients in a large bowl.

Gradually mix dry ingredients into the creamed mixture.

Carefully fold in cranberries by hand.  DO NOT use a mixer for this step.

Drop batter by rounded spoonfuls onto the cookie sheets.

Space cookies about 2″ apart.

Bake for 10-12 minutes.

Wouldn’t it be nice to have a batch of these cookies today?  Yum!  What are your favorite ways to eat or drink cranberries?  My mama always made her famous cranberry salad for our Thanksgiving dinner – and I can’t imagine turkey without the gravy, mashed potatoes and – you guessed it – cranberries!  Of course I don’t get mama’s salad anymore, but a side of cranberries for the turkey is a must in my opinion.

11-23 THE MERRY BERRY

I know it’s about Christmas…  lol!  I could not resist sharing it just a little early…  k???  If stores can have Christmas stuff out before Halloween then…  well – you know.

 Cranberries are nutritionally charged and offer a full range of health benefits.  Rich in phyto-nutrients (naturally derived plant compounds), cranberries  contain proanthocyanidin antioxidants, essential for overall wellness.  Most people are aware of the benefits of cranberry juice (of course I drink the diet Ocean Spray with Splenda).  It helps with urinary tract issues and helps keep diabetics well hydrated.

I have had SO many requests from diabetics for a sugar-free and low-carb cranberry relish – well good ol’ You Tube – it never lets me down!  Here are my favorites:

So don’t criticize the humble cranberry today – eat or drink today to your heart’s content.  Make sure you have some cranberries to make that turkey taste even better for Thanksgiving dinner too.  😉

NATIONAL JUST BECAUSE DAY

8-27 HERE IS THE REASON WHY

Today is  NATIONAL JUST BECAUSE DAY!!!

The sky’s the limit when it comes to celebrating this day.  Why do we believe that life is worth the living – and giving more of ourselves for friends, family and spouses?  Just because Christ Lives!

Maybe you’d like to bake a batch of cookies for your neighbor and hand deliver them – just because.

It’d be fun to burn a special CD of favorite songs for your special someone – just because.  You can leave it in the CD player at home or in their car.  They’ll be rocking around the house or on the way to their next destination.

How about setting up a special ice cream bar for your family – just because?  Get all your family’s favorite flavors and decorate the dining room to look festive and fun.

A special dinner for two may be in order today – just because.  Make arrangements to get a sitter for the evening and put your best tablecloth on the dining room table along with some tapers and soft music.  Fix your husband / wife’s favorite meal and then gussy up and get ready for an evening of fireworks!  Ooh la la…

When was the last time you watched your spouse’s favorite movie?  Maybe tonight you should plan to pop some popcorn and enjoy the flick together – just because.  Cuddling is encouraged.

We don’t really need a specific reason to be kind to the one we’re married to – or anyone for that matter.  These are just a few suggestions for ways to celebrate JUST BECAUSE DAY!!!  When the love of Christ is in us, it is a natural response to share His love with those around us.

 Beloved, let us love one another, for love is from God, and whoever loves has been born of God and knows God.  – 1 John 4:7

Let’s make someone’s day better today!  Let’s share God-given talents with friends and neighbors.  🙂
