Homemade Salsa

  • 2 cups chopped tomatoes (or a combination of tomatoes and fresh peaches, nectarines, mangoes or grapes)
  • 1/3 cup chopped yellow or white onion
  • 2 tablespoons chopped cilantro
  • 2 tablespoons lime juice
  • 1 jalapeño or serrano peppers, stemmed, seeded and finely chopped
  • 1/4 teaspoon fine sea salt

Put all ingredients into a bowl, toss well and serve chilled or at room temperature.

Per Serving:Serving size: about 1/2 cup, 25 calories (0 from fat), 0g total fat, 0g saturated fat, 0mg cholesterol, 150mg sodium, 6g carbohydrate (1g dietary fiber, 3g sugar), 1g protein

Most condiments are either high in sugar (also known as high fructose corn syrup) or sodium.  Most of us attempt to strike a balance between those two extremes so we don’t make our blood sugar or blood pressure unhappy.

Thankfully, there is one condiment that has not affected either my blood sugar or blood pressure – salsa! 

Everyone in my realm of influence seems to like hot salsa, but I quickly admit that I can’t handle heat.  For me, it’s got to be mild salsa.  One of our favorite Mexican restaurants serves a mild salsa that is too hot for me!  They know me and know they will have to cool the salsa down – yes, they laugh at me – but I don’t care.

Because salsa is such a healthy alternative, I use it in some rather unconventional ways:

  • Baked potatoes taste so good with salsa on top instead of fattening butter
  • Mix salsa with mayo to save some serious calories before dressing up your burger
  • Try mixing salsa into your scrambled eggs
  • Salsa is a great veggie dip.  Have you read the label on your favorite dip?  It’s crazy!

We can’t have a garden where we live now, but as a kid my folks grew their own tomatoes, peppers and onions to make homemade salsa.  Of course, the most traditional pairing is tortilla chips and salsa.  There are typically quite a few carbohydrates in tortilla chips, so keep that in mind.  Beyond that, have a good time with your favorite salsa dish!  Ole’!  🙂

Back home, I had chickens, a rabbit named Bugs, a Shetland Pony named Dolly, a dog named Dusty, a dog named Lady and the odd cricket I managed to catch and put in a wire cage.  I’m more than qualified to be a pet parent.  We had more animals than the North Riverside Park Zoo!

Today is NATIONAL PET PARENT’S DAY!!! Obviously, Casey has me wrapped around his little paw, but I think some other folks are pretty entertained by their pets as well.

OK, there’s no way I’d adopt a pet like a lion or tiger or anything really wild…  BUT what about a hedgehog???  Um…  well…

Keep in mind that adopting a pet from a shelter is a lifelong commitment. You have to love and care for that animal for the rest of its life. Yes they are cuddly and cute, but they may have some fairly high vet bills because of sickness or injury at some point. It’s not all just laughter and light, although it’s usually a good day.

If at all possible, adopt from a shelter. Don’t buy animals from pet shops or from breeding farms out in the country. I made a horrible mistake when I was young and stupid. I paid a large sum of money for a sheltie puppy to a breeding farm. When I took the pup in to the vet to be examined, I learned he had heartworms! I didn’t put the pup down, but the treatments nearly killed the poor baby. He survived but it took a long time for him to bounce back from the “lead” treatments. I should have sued the breeder to at least get my money back, but I didn’t.

In our 27 year marriage we’ve had 4 dogs and a cat. Not all at once. We only have one dog at a time. My husband had a cat when I married him. I can’t imagine not having a pet. There’s a love with animals that you just don’t have with people. They make no demands and don’t hold grudges.
